For instant messaging, get Fire.... Supports AIM, MSN, Yahoo, ICQ, IRC, and Jabber. I use it for all of 'em (Don't use Jabber though). I don't like it, but some others prefer Adium....

For videos, you got QuickTime obviously. If a movie won't play in QT, go with VLC... and MPlayer.... Get both.

A couple things to get are definitely Fink... and Portage...(for OS X).

They both give you one hell of a selection of unix programs and do all the work of compiling and installing them for you. And yes that is Gentoo... Portage system, so it works like normal: emerge whatever.

Fink is easy to use to (like portage, but fink has been around for a long time, since the early days of OS X). Just use: fink install whatever (or fink list, to see what it has).
