Start developing for the Saturn in 2025

Hello,
I'm starting to develop for the Saturn for the first time and I'm a bit lost about how to setup a good working environment, hence the following questions.
(For the context, I have a master degree in computer science, but haven't used C that much, kinda played around Dreamcast development 10 years ago, but nothing serious).

I've used jo-engine at first, made a little shoot-them-up for the sake of testing it, but now I'd like to play with SBL. In order to do that, I finally tried to understand the tools jo-engine is built on, and I don't quite get it (what compiler is that? Why is that linker file designed like that? etc.)

Concretely, I'd like to set things up in a way where I can start project that can use jo_engine (I tuned it in something less intrusive), SGL and SBL or not whenever I want.
- Is there an easy way to do that?
- If not, I'll do it myself but then I need to know, how can I build the samples that are packed with SBL? What compiler should I use? Is it the one that was used at the time, or is it different and does it imply to tune things to get the samples working?
